Home-made turkey soup with home-made biscuits

I'm recovering from my "Road Trip" and Thanksgiving by having a nice quiet day at home.  Been catching up on laundry, emails and figuring out what to do with the turkey leftovers!
I've decided to make a nice hearty turkey soup for tomorrows dinner, so right now I have the carcass simmering with some onions, carrots, celery, salt, pepper and bay leaves.  It needs to simmer for a few hours and then I'll refrigerate it and tomorrow I'll remove the meat, strain the broth and start in on the real soup making.
Usually I add diced carrots, onions and celery along with fresh or dried herbs, barley and rice or noodles of some sort.  Just before serving I like to add something green such as peas, broccoli and or parsley.

It's a bit of a tradition in our house to also have some light and flaky home-made biscuits with our soup.
This is the recipe I use and they turn out great every time!!


Biscuits
2 cups all purpose flour
2 Tbsp. white sugar
1 tsp. salt
4 tsp. baking powder
1/2 tsp. cream of tarter
1/2 cup cold butter or margarine (Brick style,  if using margarine do not use the soft container type!!)
1 cup of cold milk (or buttermilk)


   Put first 5 ingredients in a bowl and whisk well to combine.
   Cut butter into flour until the mixture appears crumbly and the butter pieces are no larger than pea sized.
   Pour in milk and stir quickly, but gently, to combine.  Turn onto a lightly floured board and knead gently 8-10times.  Pat dough until approximately 1/2" - 3/4" in thickness.  Cut into 12 pieces or cut using a medium round cutter.  Place on parchment lined baking sheet and chill for at least 1/2 hour. 
  Bake at 450 degrees F. for 12-15 minutes.  When cool enough to touch, remove biscuits from pan and place on wire rack.
(Handle the dough gently and whatever you do...don't overwork it!)

Road Trip - Heading Home



I’m writing this on the way home from our “half way “cross country road trip.  Leaving is always bitter sweet; you’re happy to be heading home but sad to be leaving behind,  the people you love.  
I had an amazing visit with my son; we were able to have lots of mother son time.  One day, while he was at work I happily spent my day cooking, baking, and filling his freezer with home-made goodies.
One night of my visit we went out for a really great dinner...the appetizer we shared was called a “Ploughman’s Platter” and was filled with roasted garlic, sliced baguette, a couple different cheeses, pate, pickled onions, a garlic and onion relish and quail eggs!  I had never had them before and I was very excited to give them a try.  They were served whole and hard boiled.  They looked and tasted just like tiny regular eggs.
I was able to spend a couple more days in Chateauguay with my friends and their aunt and uncle.  Their aunt and uncle were so sweet to me; they took me in and treated me like one of the family.
I ate so much on this trip that I feel like I’m a stuffed turkey, ready for the oven.

Road Trip - Early (Canadian) Thanksgiving

  
 In a previous post (Road Trip!!)  I mentioned I was with friends, heading out on road trip that extended half way across the country.  We had an fairly early start the first day, the wheels on the car started going round and round at 7:02AM. 
  We drove as far as Chateauguay, QC on the first leg of our journey.  My friend's, aunt and uncle lived here and we were invited to spend the night at their home. When we arrived in Chateauguay, we made a quick stop for wine and fresh flowers and then continued on to their home.  I was greeted like family and made to feel very welcomed and special!  After getting situated in my room and freshening up a bit I joined our hosts for wine with crackers and a delicious pate, followed by an amazing chicken dinner and an apple bundt cake for dessert.  Can you say spoiled!! 
 The next day we travelled onto London, Ontario where my son lives and I settled in for an early Thanksgiving celebration with my son.  My friends continued on down the road,  heading west!

Road Trip!!!


   Tomorrow morning I'm leaving on a road trip with some very old friends.  Very old...as in length of time I've known them. Well, he's kind of old, but she's just a young women, like myself :)
   Anyway... they're driving half way across the country to visit relatives.  Knowing our son lives in London,  they kindly asked if either my husband and/or I would like to join them? They would drop us off in London and then pick us up on the return trip. 
   My husband is unable to make the trip but I've jumped at the chance!!   Road trips are my favourite mode of travel.  I know, I know...it does take forever to get anywhere, however, if my timeline is flexible and I'm not in a hurry I love to drive be chauffeured!!
   Amazing scenery, many book chapters to be read, maps to follow...I love charting our progress (... that's not normal is it?), magazines to flip through, long meaningful talks, naps to take, (this is why I can't drive), lists to make (I feel this may be another abnormality),  snacks, and many, many, many cups of coffee ....I love road trips!!!
