A - Z Blogging Challenge - H

Another simple, easy and delicious appetizer.  I love hummus, it's one of my favourite things!

“H”

Hummus

1 -  540 ml (19 oz.) can chickpeas
1/4 cup reserved liquid from chickpeas
3 Tbsp. tahini paste
4 cloves garlic (roughly chopped)
4 Tbsp. freshly squeezed lemon juice
1/2 tsp. salt
2 Tbsp. olive oil (plus extra for garnish)
1 Tbsp. finely chopped flat leaf parsley (garnish)

Drain chickpeas and set aside liquid from can.  Combine chickpeas, tahini paste, garlic, lemon juice, salt and olive oil in blender or food processor.  Add 1/4 cup of the liquid from the chickpeas and blend on medium speed until creamy.  Transfer to serving bowl, drizzle with a little olive oil and garnish with the chopped parsley.

Serve with fresh, warm or toasted pita bread, or cover and refridgerate.

I was first introduced to hummus in Iraq. I wasn't much of a fan at the time, but that could have been for the fact that the person who had me try it slathered a LOT of hummus onto the flatbread. It was at least a half an inch thick.

I've had hummus since then in small doses and have found I can stomach it better.

Now I'll have to try out this recipe some time. Thanks for sharing!

I love hummus and more importantly so does my three year old. Where do I find tahini paste? A special food store or is it in regular grocery stores?

I'm very excited to try this recipe.

Thank you for your lovely comment. I already follow your yummy blog...I do not like hummus though. I first had it made by an Indian friend (from India) and again in a restaurant. Should I try it again?

I absolutely adore hummus! It's such a low cost, healthy dish that offers so much flavor. I had a parsley hummus last week and it was delightful!
