A - Z Blogging Challenge - K


With spring and summer just around the corner (...I hope!!)...this is a great,  light dessert to serve after a big barbecued feast!!

Key Lime Pie

Crust:
1 cup graham cracker crumbs
2 Tbsp. white sugar
3 Tbsp melted butter

Filling:
4 egg yolks
1/3 cup freshly squeezed key lime juice
1 can sweetened condensed milk
zest of 1 lime

Crust:  Mix ingredients together well and press into bottom and up the sides of a 9" pie plate.  Bake at 325 degrees F. for 10 minutes.
Filling:  whisk egg yolks, add remaining ingredients and mix well.  Pour into baked shell.  Bake at 325 degrees F. for 12-15 minutes or until centre is set.  Let cool completely before serving.  When serving, if desired, top each slice with a dollop of whipped cream and a sprinkle of lime zest.

Key lime pie is almost a staple in florida its the only pie you will find in every store and resturant in Key West from Miami all the way south to the Key Biscayne West, everyone has a diffferent version... this pie recipe sounds delicious, we are growing a key lime tree and it has buds on it now will have to book mark this one!

  2. This is definitely something I want to learn to make. I absolutely love Key Lime Pie. I had it in Florida many years ago, and it was the best I ever had.

  3. A fav for our family...memories of the Caribbean. Warm breezes as the sun sets...dinner at a beach restaurant...and key lime pie for dessert.

  10. Or you can use the whites from the 4 yolks and make a meringue for the top. I think that's the traditional way.
