Another simple, easy and delicious appetizer. I love hummus, it's one of my favourite things!

Hummus
1 - 540 ml (19 oz.) can chickpeas
1/4 cup reserved liquid from chickpeas
3 Tbsp. tahini paste
4 cloves garlic (roughly chopped)
4 Tbsp. freshly squeezed lemon juice
1/2 tsp. salt
2 Tbsp. olive oil (plus extra for garnish)
1 Tbsp. finely chopped flat leaf parsley (garnish)
Drain chickpeas and set aside liquid from can. Combine chickpeas, tahini paste, garlic, lemon juice, salt and olive oil in blender or food processor. Add 1/4 cup of the liquid from the chickpeas and blend on medium speed until creamy. Transfer to serving bowl, drizzle with a little olive oil and garnish with the chopped parsley.
Serve with fresh, warm or toasted pita bread, or cover and refridgerate.

ReplyDeleteI was first introduced to hummus in Iraq. I wasn't much of a fan at the time, but that could have been for the fact that the person who had me try it slathered a LOT of hummus onto the flatbread. It was at least a half an inch thick.

I absolutely adore hummus! It's such a low cost, healthy dish that offers so much flavor. I had a parsley hummus last week and it was delightful!
